Good to know

  • Preheat oven to 200C/180C Fan/Gas Mark 6
  • Heat 2 tbsp of oil in a roasting tray
  • Peel and cut carrots and parsnips into large chunks
  • Simmer in water for 3-4 mins to slightly soften
  • Drain off all the water
  • Coat the carrots and parsnips in 1 tbsp of oil
  • Sprinkle over all of the seasoning
  • Add the coated carrots and parsnips to the heated roasting tray
  • Roast for 30-40 mins until golden brown, turning part way through
